Need some easy inspiration for dinner tonight? We’re coming at you with three different chicken recipes that are actually exciting. And…wait for it…they’re gluten- and dairy-free.

Barbecue Chicken Chopped Salad

Ingredients:

2 heads romaine lettuce, chopped
¾ cup peeled and julienned jicama
2 medium tomatoes, diced
2 ripe avocados, diced
¼ cup chopped fresh basil leaves
¼ cup chopped fresh cilantro leaves
2 tablespoons chopped scallions
¾ cup Ranch Dressing
2 cups diced cooked chicken
¼ cup Barbecue Sauce

Healthy Chicken Verde

Ingredients:

1 tablespoon ghee or coconut oil
6 chicken legs, bone-in and skin-on sea salt and cracked black pepper
2 cloves garlic, crushed into a paste
2 teaspoons ground cumin
1 teaspoon ground coriander
2 cups Roasted Tomatillo Salsa, divided

Ginger Chicken and Broccoli

Ingredients:

3 tablespoons expeller- pressed coconut oil or ghee, divided
6 cloves garlic, minced 1½ tablespoons peeled and minced fresh ginger
6 scallions, white parts only, chopped
2 heads broccoli, cut into florets
3 pounds boneless, skinless chicken thighs, trimmed of fat and cubed
1 cup coconut aminos
2 tablespoons toasted (or dark) sesame oil
1 teaspoon sea salt
2 large egg yolks
